Chicken Tetrazzini
Ingredients
- 2 cups chicken breast no skin, no bone, R-T-C
- salt
- 1/4 pound angel hair pasta
- 1/4 cup butter
- 1/4 pound mushrooms
- 1/3 cup all-purpose flour
- 1 pound chicken broth
- 1/4 cup heavy cream
- 1 pinch nutmeg
- 1 ounce Parmesan cheese
Instructions
- Preheat oven to 350¼. Cook pasta to package directions, rinse, toss and set aside in cold water. Melt butter in a sauce pan, add mushrooms and saute for about 5 minutes. Remove mushrooms. Sprinkle flour into remaining butter and stir over low heat for 1-2 minutes. Gradually stir in broth. Simmer until thickened and smooth. Remove from heat and add other ingredients including pasta. Pour mixture into casserole dish. Sprinkle cheese on top and bake for 30 minutes.
