Basic Chicken Quesadillas
This quick and easy meal can be customized to your preference- from BBQ chicken, Bacon-Ranch chicken, fajita, to the sky’s the limit!
Basic Chicken Quesadilla Recipe
Ingredients
- 2 tortillas
- 1/2 cup chicken cooked and finely diced
- 1/2 cup Monterey Jack shredded cheese use more or less to your liking, also change the cheese
- 1 tablespoon vegetable oil
- 1 tablespoon butter
Instructions
- Melt oil and butter over medium-high heat in a skillet. Place one tortilla in the skillet and add shredded cheese and chicken. Top with second tortilla. After about 3 minutes, lift the top tortilla and see if cheese is beginning to melt. Once bottom tortilla had turned a light golden brown, very carefully flip the Quesadilla, so the filling doesn't fall out. Brown the second side. Remove from pan, slice into wedges with a pizza cutter and serve with toppings of your choice.Optional additions: Crumbled bacon, tomatoes, cilantro, salsa, peppers, sour cream
