Ingredients
  

  • 1 pound ground chicken
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp. pepper
  • 3 tbsp. parsley
  • 2 tbsp. grated parmesan cheese
  • 1/2 egg
  • Breadcrumbs
  • 1/2 panko Or pork rinds for Keto Version
  • 1/4 tsp. salt
  • 1/2 tsp garlic powder
  • 3 tbsp. grated parmesan
  • 2 tbsp. parsley
  • 2 tbsp. olive oil
  • Salad Ingredients:
  • 2 cups arugula
  • 3/4 cups cherry tomatoes halved
  • shaved Parmesan
  • Balsamic Vinaigrette:
  • 1/3 cup olive
  • 2 tbsp. balsamic vinegar
  • 3 tbsp. orange juice
  • 1 tbsp. honey
  • 1/2 tsp Dijon Mustard
  • 1/2 tsp salt
  • 1/2 shallot

Instructions
 

  • Preheat oven to 375f
  • Add the ground chicken ingredients to a bowl and mix well.
  • Add the breadcrumbs to a bowl and mix well.
  • Line a baking dish with parchment paper.
  • Place the chicken mixture onto a parchment paper and spread it in a round flat circular patty.
  • Top the chicken patty with breadcrumb mixture and bake on top 3rd of the oven for 15 -20 minutes or until the chicken is cooked through an the breadcrumbs are a deep golden brown.
  • Transfer to a serving place and top with salad ingredients.
