Easy Chicken Milanese
Ingredients
- 1 pound ground chicken
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp. pepper
- 3 tbsp. parsley
- 2 tbsp. grated parmesan cheese
- 1/2 egg
- Breadcrumbs
- 1/2 panko Or pork rinds for Keto Version
- 1/4 tsp. salt
- 1/2 tsp garlic powder
- 3 tbsp. grated parmesan
- 2 tbsp. parsley
- 2 tbsp. olive oil
- Salad Ingredients:
- 2 cups arugula
- 3/4 cups cherry tomatoes halved
- shaved Parmesan
- Balsamic Vinaigrette:
- 1/3 cup olive
- 2 tbsp. balsamic vinegar
- 3 tbsp. orange juice
- 1 tbsp. honey
- 1/2 tsp Dijon Mustard
- 1/2 tsp salt
- 1/2 shallot
Instructions
- Preheat oven to 375f
- Add the ground chicken ingredients to a bowl and mix well.
- Add the breadcrumbs to a bowl and mix well.
- Line a baking dish with parchment paper.
- Place the chicken mixture onto a parchment paper and spread it in a round flat circular patty.
- Top the chicken patty with breadcrumb mixture and bake on top 3rd of the oven for 15 -20 minutes or until the chicken is cooked through an the breadcrumbs are a deep golden brown.
- Transfer to a serving place and top with salad ingredients.
