Sauté onion for about 5 minutes in additional tablespoon of vegetable oil until the onion is soft Add the garlic and cook for one more minute. Increase heat to high, add in the remaining 1 1/2 tablespoons of oil, and add the rice, green onions, soy sauce. Continue sautéing for an additional 5 minutes to fry the rice, stirring occasionally. Then add in the eggs and diced chicken and stir to combine. Remove from heat. Taste and season with extra soy sauce, if needed.
