Super Fast Chicken Fried Rice

This recipe comes together extra quickly because you use precooked chicken and you cook your rice either that morning or the night before.

Chicken Fried Rice

Ingredients
  

  • 3 tablespoons vegetable oil divided
  • 2 eggs whisked
  • 12 ounces frozen peas and carrot mix
  • 1 small white onion diced
  • 3 cloves garlic minced
  • 2 tsp. fresh ginger minced
  • salt and black pepper
  • 4 cups cooked and chilled rice I prefer short-grain white rice
  • 3 green onions thinly sliced
  • 2 cups cooked chopped chicken
  • 3 –4 tablespoons soy sauce or more to taste
  • 4 tablespoons butter

Instructions
 

  • Microwave peas and carrots until done, about 6-7 minutes.
  • Heat 1/2 tablespoon of vegetable oil in a large sauté pan over medium heat. Add egg, and scramble. Remove the egg to a plate.
  • Sauté onion for about 5 minutes in additional tablespoon of vegetable oil until the onion is soft Add the garlic and cook for one more minute. Increase heat to high, add in the remaining 1 1/2 tablespoons of oil, and add the rice, green onions, soy sauce. Continue sautéing for an additional 5 minutes to fry the rice, stirring occasionally. Then add in the eggs and diced chicken and stir to combine. Remove from heat. Taste and season with extra soy sauce, if needed.

Notes

Pro tip: Cook the rice that morning and refrigerate until ready to stir fry.
This is also delicious with shrimp!
