Chicken and Orzo Salad
Ingredients
- ⅔ cup pesto
- 2 tablespoons white wine vinegar
- 1/4 tsp. salt
- pinch pepper
- 3 tablespoons olive oil
- ¾ cup orzo
- 2½ cup shredded chicken
- ½ cup cherry tomatoes halved
- 6 ounces baby spinach
Instructions
- Make the vinaigrette: in a large bowl, whisk together the pesto, vinegar, 1/4 tap. salt, and pepper. Gradually whisk in olive oil, until smooth. Cook the orzo to package directions, drain and toss with vinaigrette.NOTE: You can add corn and bacon or swap the chicken for shrimp.
