Ingredients
  

  • cup pesto
  • 2 tablespoons white wine vinegar
  • 1/4 tsp. salt
  • pinch pepper
  • 3 tablespoons olive oil
  • ¾ cup orzo
  • cup shredded chicken
  • ½ cup cherry tomatoes halved
  • 6 ounces baby spinach

Instructions
 

  • Make the vinaigrette: in a large bowl, whisk together the pesto, vinegar, 1/4 tap. salt, and pepper. Gradually whisk in olive oil, until smooth.
    Cook the orzo to package directions, drain and toss with vinaigrette.
    NOTE: You can add corn and bacon or swap the chicken for shrimp.
