Creamy Chicken-Bacon Ziti

Ingredients
  

  • 1 tsp olive oil
  • 1/2 lb ziti
  • 8 oz bacon chopped
  • 6 oz chicken chopped into bite-size pieces
  • 1/4 tsp paprika optional
  • 1/2 tsp garlic powder
  • Salt and pepper
  • ¾ cup heavy cream cream
  • ¾ cup chicken broth low sodium
  • ½ cup freshly grated parmesan not store bought doesn’t melt as well
  • To Serve:
  • Finely sliced basil
  • Parmesan

Instructions
 

  • Bring a large pot of water to the boil, add ziti and cook for the length of time per the packet MINUS 1 minute. Drain.
  • Meanwhile, heat oil in a large skillet over high heat. Add bacon and cook until almost golden. Remove some bacon and set aside for garnish (optional).
  • Add chicken and cook until it partly turns white, then sprinkle with salt, pepper, paprika and garlic powder. Cook until the chicken all turns white.
  • Add cream, broth, and parmesan. Bring to a simmer, then add ziti. Stir on the stove for 2 minutes until the sauce reduces and thickens, coating the pasta.
  • Serve immediately, garnished with basil, parmesan and reserved bacon.
