Simple and Quick Chicken Stir Fry
Any protein can be used in this quick stir fry. Some ideas include shrimp, leftover steak, scrambled eggs and firm tofu.
Chicken and Ramen Veggie Stir Fry
Ingredients
- 1 package fresh stir fry veggies
- 1/4 cup teriyaki sauce
- Olive oil
- 1 teaspoon minced garlic
- 3 packages Ramen Noodles with seasoning packet discarded
- 1 pound chicken cooked and cubed
Instructions
- Heat olive oil in a large saute pan or wok. Add garlic for one minute add veggies. Stir for about 2 minutes. Add chicken and reduce heat to low and cover. Cook until veggies have just started to soften, about 6 minutes. You do NOT want limp veggies. Meanwhile, cook the ramen noodles following package directions. Remove from heat and add teriyaki sauce and drained noodles. Our favorite is Panda Express brand Teriyaki.
- Variation: You can add cooked chicken, shrimp or pork and two packages of cooked Ramen noodles to turn this into a full meal.
