Dinner 11: Chicken Fajita Meal Plan

My husband has been asking for fajita’s, however, not loving peppers, I have been reluctant to oblige. Luckily for him, the grocery store switched my order from diced chicken breast to sliced breast. I figured that he would be thrilled if I made him fajita’s. An added bonus was that we also had all of the ingredients in the fridge. So here it goes!

I made the chicken fajitas. Along with the Chicken Fajita Seasoning, I served warmed tortilla’s and the favorite toppings of sour cream, cilantro, shredded Monterey Jack cheese, and easy guacamole. As a side dish, I served Mahatma yellow rice (a simple packet of rice and seasonings that is finished in about 20 minutes), warmed refried beans and Smashed Black beans.

This can be found in the rice section of the supermarket and is usually sitting in a cardboard display.

Chicken Fajita Seasoning

A flavorful but not too spicy mix for Chicken

Ingredients
  

  • 1 tbsp corn starch
  • 2 tsp chili powder
  • 1 tsp salt
  • 1 tsp white sugar
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ¼ tsp cayenne pepper
  • 1/2 tsp cumin

Instructions
 

  • Stir all ingredients into a bowl. Use to season 1 pound of chicken, 2 large onions, and 2 large red peppers.
    Sauté onions and peppers in a skillet with 1 tbsp. olive oil and 1 tbsp. butter for about 5 minutes on medium. Remove vegetables from skillet. Add raw chicken and cook until no longer pink. Add the vegetables back into the skillet with the chicken and stir in the seasoning. Add 2 tbsp. of water, if needed, so that the seasoning can coat the chicken and vegetables. Cook for another 2 minutes until everything is hot.

Smashed Blackbeans

Ingredients
  

  • 2 slices bacon chopped
  • 1/4 onion sliced
  • tbsp garlic
  • 2 can black beans drained and rinsed
  • ½ cup chicken stock
  • 1 bay leaf

Instructions
 

  • Saute bacon in a medium saucepan. When bacon is almost cooked through, add chopped onion and cook for an additional 5 minutes. When onion is translucent and soft, add the beans, chicken broth and bay leaf. Simmer gently for about 10 minutes. Remove bay leaf and gently smash some of the beans so that the texture is creamy with about half of the beans intact and not smashed. Test for taste and add salt and pepper if needed.
