White Chicken Chili
Delicious with corn bread.
White Chicken Chili
Ingredients
- 4 cups cubed boneless chicken breast (1 1/2 pounds)
- 2 cloves garlic minced
- 2 medium onions chopped
- 1 tablespoon oil
- 3 15ounce cans chicken broth
- 3 15 ounce cans white beans
- 1 10 ounce can Mexican style tomatoes diced
- 1/4 teaspoon red cayenne pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- grated Monterey Jack cheese
Instructions
- In a large skilled cook chicken, garlic and onion in oil. Add broth; heat to boil. Reduce heat and simmer until chicken is cooked, 10-15 minutes. Add beans, cayenne pepper tomatoes, cumin and oregano. Serve topped with cheese
