Delicious with corn bread.

White Chicken Chili

Ingredients
  

  • 4 cups cubed boneless chicken breast (1 1/2 pounds)
  • 2 cloves garlic minced
  • 2 medium onions chopped
  • 1 tablespoon oil
  • 3 15ounce cans chicken broth
  • 3 15 ounce cans white beans
  • 1 10 ounce can Mexican style tomatoes diced
  • 1/4 teaspoon red cayenne pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • grated Monterey Jack cheese

Instructions
 

  • In a large skilled cook chicken, garlic and onion in oil. Add broth; heat to boil. Reduce heat and simmer until chicken is cooked, 10-15 minutes. Add beans, cayenne pepper tomatoes, cumin and oregano. Serve topped with cheese
